Pernod sautéed pickerel cheeks with fresh fennel salad on Yukon gold bilini
Lightly sautéed pickerel cheeks finished with cream on top of fresh fluffy potato bilini with a crisp fresh fennel salad.

Spinach, pomegranate & feta salad adorned with balsamic dressing and toasted walnuts
Baby spinach leaves increased in a cucumber ribbon with creamy feta,
toasted walnuts, pomegranate seeds and a balsamic drizzle.

A refreshing palate cleanser before the main event. No wine pairing with this course because we’ve put the wine in it! A red wine raspberry sorbet, yum.
