Starter (not available in first seating) 

Pernod sautéed pickerel cheeks with fresh fennel salad on Yukon gold bilini

Lightly sautéed pickerel cheeks finished with cream on top of fresh fluffy potato bilini with a crisp fresh fennel salad.

Wine pairing to be announced

Salad 

Spinach, pomegranate & feta salad adorned with balsamic dressing and toasted walnuts

Baby spinach leaves increased in a cucumber ribbon with creamy feta,

toasted walnuts, pomegranate seeds and a balsamic drizzle.

Sorbet 

A refreshing palate cleanser before the main event. No wine pairing with this course because we’ve put the wine in it! A red wine raspberry sorbet, yum.

 

Entrée

Choose either

Slow braised New Zealand lamb fore shank served with creamy celeriac and Yukon gold mash and oven roasted golden beets and brocolini

Tuna steak crusted with ginger and walnuts, served with a mountain of fresh Manitoba greens tossed in balsamic vinaigrette and stacked on top a bed of fluffy couscous

Mini Bacon Wrapped Elk Meatloaf. Individual Manitoba Elk meat loaf wrapped in bacon and served with half pint’s bull dog spiked demi sauce. Accompanied by our feature potatoes and featured vegetables
